Cauliflower Sauté

  • 1 small head of cauliflower broken into small florets
  • 1 medium onion, coarsely diced
  • 3 small bell peppers of different colors, coarsely diced (or hot peppers - your preference!)
  • 1/2 lb. bacon, cooked & crumbled
Save the grease from frying the bacon & start cooking the cauliflower in it. As the cauliflower begins to soften, add the onion & peppers & continue cooking until all is tender-crisp. Of course if you like these veggies a little softer, then cook a little longer!  ;)

I made this Cauliflower Saute today and it is wonderful.  My blood sugar was stable at 105 at the beginning of our meal and also 4 hours later.  I highly recommend this recipe.  It is a keeper.    :)
